Hummus

It is known that its origins are based in the Middle East. It is served as an appetizer, dip sauce or snack and the main ingredients are chickpeas and tahini. Frequently flavored with cumin. In Turkey, hummus is considered a “meze” for late lunch or dinner.

It is so important how well chickpeas are cooked which gives it a smooth appearance. In this way you can use canned or prepare it by yourself. Due to the long cooking time, you need to soak the chickpeas one night before, so that the cooking time will be shorten otherwise you have to cook all day.

Preferably, I use a pressure cooker, that takes 15-20 minutes.

Also as you soak the chickpeas, if you add apprx. 1 tsp carbonate it will make them much softer.


INGREDIENTS:

  • 400 gr. chickpeas (canned or homemade)

  • 3 tbsp. tahini

  • 2-3 garlic cloves

  • 1 lemon juice

  • 4 tbsp water

  • 50 gr. olive oil

  • 1 tsp cumin

  • 1 tsp salt


For The Top:

  •  3 tbsp olive oil or melted butter

  • 1 tsp ground sweet red pepper.

INSTRUCTIONS:

  • Peel the shells of the cooked chickpeas.

  • Grate the cloves

  • Put the all ingredients in your food processor, let it run for a minute or so until it gets creamy.

  • Serve it in a suitable plate with oil and pepper on it.
