Almond & Coconut Marble Cake

INGREDIENTS

  • 200 gr almond flour

  • 30 gr coconut flour

  • 3 eggs

  • 100 gr butter

  • 110 gr sugar

  • 70 gr semisweet or bittersweet chocolate, chopped

  • 3 tbsp yoghurt (Greek style)

  • 2 tbsp heavy cream

  • 2 tsp vanilla extract

  • 2 tbsp cocoa powder

  • 1 packet baking powder

  • A pinch of salt

INSTRUCTIONS

  • Melt the butter and the chocolate separately and set aside to cool.

  • Mix together almond, coconut flour, baking powder and salt. Set aside

  • Beat the eggs for a while then add the sugar and keep mixing.

  • Add the butter, cream, yoghurt, vanilla to the batter in order while the mixer is running.

  • Put the dry ingredients into the wet ingredients and mix.

  • Divide the batter between 2 bowls.

  • Stir the cocoa powder and melted chocolate into the mixture in one of the bowls.

  • Spoon the batter into the greased cake pan in 3 layers. Each layer content mixing plain and cocoa mixture.

  • With knife swirl it around the mixture in the tin a few times to create a marble effect.

  • Bake for 40-45 minutes in the preheated oven at 180C (356F).

  • After cool you can drizzle melted chocolate top of the cake.
