Berries Chocolate Chip Spoon Cake

INGREDIENTS:

  • 115 gr butter (at room temperature)

  • 120 ml milk

  • 100 gr light brown sugar or coconut sugar

  • 150 gr berries (strawberry, blackberry)

  • 170 gr almond flour

  • 30 gr coconut flour

  • 2 eggs

  • 2 tbsp coconut oil

  • 100 gr chocolate chips

  • 1 tsp vanilla extract

  • 1 tbsp cornstarch

  • 1 tbsp lemon zest

  • 1,5 tsp baking powder

  • A pinch of salt

INSTRUCTIONS:

  • Softly mash the berries to release all their juices and stir in 1/3 of sugar and starch. Set aside.

  • Into a mixing bowl, beat the butter and the remaining sugar until creamy

  • Add the coconut oil, eggs, milk in order while the mixer is running

  • Put sifted flour (either all almond flour or mix), baking powder, lemon zest, salt and vanilla extract. Mix them just until the batter is smooth

  • Once mixed fold in chocolate chips

  • Transfer the batter to the greased baking dish (20 cm, 8”) and spread evenly

  • Spoon the berries and all their juices over the top of the batter

  • Bake in the preheated oven at 175C (350F) for 30-35 minutes until golden brown

  • Serve warm or not with ice cream
