Berries Chocolate Chip Spoon Cake
INGREDIENTS:
115 gr butter (at room temperature)
120 ml milk
100 gr light brown sugar or coconut sugar
150 gr berries (strawberry, blackberry)
170 gr almond flour
30 gr coconut flour
2 eggs
2 tbsp coconut oil
100 gr chocolate chips
1 tsp vanilla extract
1 tbsp cornstarch
1 tbsp lemon zest
1,5 tsp baking powder
A pinch of salt
INSTRUCTIONS:
Softly mash the berries to release all their juices and stir in 1/3 of sugar and starch. Set aside.
Into a mixing bowl, beat the butter and the remaining sugar until creamy
Add the coconut oil, eggs, milk in order while the mixer is running
Put sifted flour (either all almond flour or mix), baking powder, lemon zest, salt and vanilla extract. Mix them just until the batter is smooth
Once mixed fold in chocolate chips
Transfer the batter to the greased baking dish (20 cm, 8”) and spread evenly
Spoon the berries and all their juices over the top of the batter
Bake in the preheated oven at 175C (350F) for 30-35 minutes until golden brown
Serve warm or not with ice cream
