Orange and Cocoa Cake with Pistachio

You will love this moist, softy and flavor orange cocoa cake. I serve with condensed milk sauce that gives it a very rich taste.

Prep time: 15-20 minutes

Bake time: 35-40 minutes


INGREDIENTS:

  • 4 eggs (at room temperature)

  • 400 gr flour

  • 200 gr granulated sugar

  • 200 ml vegetable oil

  • 250 ml milk (at room temperature)

  • 70  gr unsweetened cocoa powder

  • 1 envelope baking powder

  • ½ tsp salt

  • 1 tsp vanilla extract

  • 1 orange zest

  • 2 tbsp chopped pistachio

For the Sauce:

  • 1 egg yolk

  • 300 ml condensed milk

  • 100 ml whipping cream

INSTRUCTIONS:

For the Sauce:

  • Whip the heavy cream for a couple of minutes until thick consistency and set aside.

  • Mix the condensed milk with egg yolk on medium heat until comes to boils. Let it cool.

  •  Add the cream into the egg-cond.milk mixture and mix them to combine.

For the Batter:

  • Combine sifted flour, cocoa powder, baking powder and salt in a large bowl. Whisk thoroughly to combine well.

  • Beat well the eggs with sugar until looks creamy.

  • While the whisking continues add the oil and milk in order.

  • Put the dry ingredients into the wet mixture in 3 steps. Mix them until only combined.

  • Add the orange zest and vanilla extract and mix a few second.

  • Preheat oven to 180C/350F

  • Grease the 10”(26cm) round cake pan with butter and sprinkle some flour to avoid from sticking and tap to the cake pan lightly to remove the excess flour.

  • Pour the batter into the pan and bake for it 35-40 minutes. Until toothpick comes out clean.

  • Serve with sauce and pistachio.
