Orange and Cocoa Cake with Pistachio
You will love this moist, softy and flavor orange cocoa cake. I serve with condensed milk sauce that gives it a very rich taste.
Prep time: 15-20 minutes
Bake time: 35-40 minutes
INGREDIENTS:
4 eggs (at room temperature)
400 gr flour
200 gr granulated sugar
200 ml vegetable oil
250 ml milk (at room temperature)
70 gr unsweetened cocoa powder
1 envelope baking powder
½ tsp salt
1 tsp vanilla extract
1 orange zest
2 tbsp chopped pistachio
For the Sauce:
1 egg yolk
300 ml condensed milk
100 ml whipping cream
INSTRUCTIONS:
For the Sauce:
Whip the heavy cream for a couple of minutes until thick consistency and set aside.
Mix the condensed milk with egg yolk on medium heat until comes to boils. Let it cool.
Add the cream into the egg-cond.milk mixture and mix them to combine.
For the Batter:
Combine sifted flour, cocoa powder, baking powder and salt in a large bowl. Whisk thoroughly to combine well.
Beat well the eggs with sugar until looks creamy.
While the whisking continues add the oil and milk in order.
Put the dry ingredients into the wet mixture in 3 steps. Mix them until only combined.
Add the orange zest and vanilla extract and mix a few second.
Preheat oven to 180C/350F
Grease the 10”(26cm) round cake pan with butter and sprinkle some flour to avoid from sticking and tap to the cake pan lightly to remove the excess flour.
Pour the batter into the pan and bake for it 35-40 minutes. Until toothpick comes out clean.
Serve with sauce and pistachio.
