Chocolate Almond Cake
Gluten free, soft and moist almond cake with chocolate.
Prep Time: 15 minutes
Bake Time: 30 minutes
INGREDIENTS:
100 gr almond flour
4 eggs (white and yolk separated) (at room temperature)
200 gr dark&milk chocolate
150 gr butter
100 gr granulated sugar
½ tsp vanilla extract
A pinch of salt
Cocoa powder (for sprinkle)
INSTRUCTIONS:
To prepare a round spring pan (23cm/9”), grease the sides with some butter and line the side and bottom with baking sheet.
In a bowl, melt the chocolate and butter together with bain-marie method.
Whisk egg yolks with half of the sugar until creamy and light
Add the sifted almond flour, melted chocolate & butter and vanilla extract into the egg yolks mixture then mix.
Beat the egg whites with salt and the remaining sugar until soft stiff peak.
Preheat oven at 180C/356F
Fold the whites into the batter 3 times with spatula until just combined.
Pour the batter to the pan and bake for 30 minutes.
After cooled the cake sprinkle some cocoa powder on it.
