Cherry Clafoutis (Clafoutis aux Cerises)
It is a creamy, custard based French dessert filled with fresh cherries or any fresh berries. The recipe is very easy all you need to do is mix the ingredients into a bowl and bake with fruit. Traditional clafoutis is dusted with powdered sugar on it. I prefer to pit the cherries but in traditional way, you do not have to do that.

Bake Time: 35-40 minutes
INGREDIENTS
400 gr cherries (pitted)
3 large eggs
150 ml milk
100 ml cream
50 gr almond flour
70 gr plain flour
100 gr granulated sugar + 1tbsp brown sugar
1 lemon zest
1 tbsp butter (melted and cooled)
1 tsp vanilla extract or 1 vanilla bean
Powder sugar (for dusting)
A pinch of salt
INSTRUCTIONS:
Preheat oven to 180C/350F
Whisk the eggs with granulated sugar until well combined
Pour the milk, cream in order while the mixer is running
Mix almond, plain flour and salt in a bowl
Add the dry ingredients into the eggs mixture
Put the vanilla and lemon zest
Add the melted butter
Grease the baking dish with some butter
Put the cherries into the baking dish and pour the batter then sprinkle 1 tbsp brown sugar on it.
Bake for 35-40 minutes until golden brown. It is ok, wobbly in the center.
Let it cool and dust with powder sugar.
