Cherry Clafoutis (Clafoutis aux Cerises)

It is a creamy, custard based French dessert filled with fresh cherries or any fresh berries. The recipe is very easy all you need to do is mix the ingredients into a bowl and bake with fruit. Traditional clafoutis is dusted with powdered sugar on it. I prefer to pit the cherries but in traditional way, you do not have to do that.


Prep Time: 15 minutes

Bake Time: 35-40 minutes

INGREDIENTS

  • 400 gr cherries (pitted)

  • 3 large eggs

  • 150 ml milk

  • 100 ml cream

  • 50 gr almond flour

  • 70 gr plain flour

  • 100 gr granulated sugar + 1tbsp brown sugar

  • 1 lemon zest

  • 1 tbsp butter (melted and cooled)

  • 1 tsp vanilla extract or 1 vanilla bean

  • Powder sugar (for dusting)

  • A pinch of salt

INSTRUCTIONS:

  • Preheat oven to 180C/350F

  • Whisk the eggs with granulated sugar until well combined

  • Pour the milk, cream in order while the mixer is running

  • Mix almond, plain flour and salt in a bowl

  • Add the dry ingredients into the eggs mixture

  • Put the vanilla and lemon zest

  • Add the melted butter

  • Grease the baking dish with some butter

  • Put the cherries into the baking dish and pour the batter then sprinkle 1 tbsp brown sugar on it.

  • Bake for 35-40 minutes until golden brown. It is ok, wobbly in the center.

  • Let it cool and dust with powder sugar.
