Victoria Sponge Cake

Victoria Sponge Cake, also known as Victoria Sandwich, is a Traditional English cake for teatime treat made of two-layer sponge cake that is filled with a layer of jam and whipped cream.

INGREDIENTS:

For Sponge Cake;

  • 3 eggs (at room temperature, yolk and white separately)

  • 130 gr granulated sugar

  • 100 ml whole milk (at room temperature)

  • 80 gr vegetable oil

  • 190 gr pastry flour

  • 1 tsp vanilla extract

  • A pinch of salt

For Strawberry Jam;

  • 300 gr strawberry

  • 90 gr granulated sugar

  • 2 tsp lemon juice

For Cream;

  • 300 gr heavy cream (cold)

  • 50 gr powder sugar

INSTRUCTIONS:

  • Preheat oven to 170C/338F

  • Cover with the parchment paper the sides and bottom of the round spring pan (15*7cm/6*3”)

  • Beat the egg yolks with half of the sugar and vanilla extract until pale and creamy.

  • While the mixer is running, gradually pour the oil and milk in order.

  • Whip the egg whites and a pinch of salt on low speed, after 1-2 minutes add the rest of the sugar one tablespoon at a time. Increase the speed and whip until soft stiff peak.

  • In the meantime, sift flour into the egg yolk mixture and fold it with rubber spatula just until combined, do not overmix.

  • With rubber spatula fold the egg whites into the batter in three steps.

  • Pour the batter into the pan, tap to counter to remove any air bubbles and bake for apprx 60 minutes, check it with toothpick after 45 minutes.

  • To make homemade strawberry jam; mix together strawberries, sugar and lemon juice into a sauce pan. Cook for 30 minutes until thicken like consistency of custard then blend it. Let it cool.

*Adjust the amount of the sugar depend on sweetness of the fruit. I prefer it not to contain too much sugar.

  • Making cream is very easy, beat the cold heavy cream with powder sugar by using hand mixer until stiff peaks. Put into the piping bag and keep in the fridge to use later.

  • After cooled the sponge cake, cut into half horizontally.

  • Apply the jam (more than half) on top of the first layer.

  • Pipe ¾ of the whipped cream in any shape over the jam.

  • Put the second layer on it and decorate with remaining of the cream and jam or you can just sprinkle powder sugar on it as you wish.

  • Keep in the fridge before serving.
