Turkish Baked Rice Pudding (Fırın Sütlaç)
This light and creamy texture and golden topping dessert is a world famous one called Sütlaç also known as rice pudding in many countries. “Fırın Sütlaç” is a Turkish baked rice pudding made with short grain rice and milk. It is made in a large pot by boiling milk and rice together on the stove, then usually baked in oven safe casseroles in the oven until the tops are browned and settled. Then it is cooled in the fridge for a few hours before serving with chopped hazelnuts and cinnamon.

INGREDIENTS:
50 gr. short grain rice
80 gr. sugar
1,2 lt. whole milk
100 ml. heavy cream
30 gr. (2 tbsp) wheat/corn starch
1 tsp vanilla extract
A pinch of salt
2 tbsp water
6 tbsp crushed hazelnuts
Ground cinnamon
INSTRUCTIONS:
Place the rice and 200 ml whole milk in a large pot.
Cook them over medium heat by stirring occasionally until the rice softens.
Add the remaining milk and bring it to a simmer over low-medium heat. Do not forget to stir to avoid the rice sticking to the bottom of the pot.
After boiling add the sugar and mix.
In a small bowl mix wheat/cornstarch and 2 tbsp water to dissolve the starch.
Add the mixture into the pot and stir.
Put the cream and vanilla then leave it on the heat for 1-2 minutes by mixing. Then remove from the heat.
Divide the mixture to individual casseroles and bake them on grill setting of the oven until the top nicely browned.
Let them cool at room temperature and then keep in the fridge a few hours.
Serve with chopped hazelnuts and cinnamon for topping.
