Savory & Soft Pastry with Feta Cheese & Dill (Poğaça)

Poğaça is a traditional savory pastry in Turkish cuisine and can be found in any bakery from early morning hours. It has various fillings; it can be made with feta cheese, cheddar, potatoes, olives or plain. Some recipes use yeast, but no need to use yeast in this recipe, because it is already very soft and fluffy.

Prep time: 30 minutes

Bake time: 20-25 minutes


INGREDIENTS:

  • 125 gr butter (at room temperature)

  • 250 gr flour

  • 50 gr vegetable oil

  • 100 gr plain yoghurt (at room temperature)

  • 1 egg white (at room temperature)

  • 1 tsp salt

  • 1 tsp baking powder

  • 30 gr finely chopped dill leaves.

  • 1 egg yolk (for graze)

  • 150 gr feta cheese (for filling)


INSTRUCTIONS:

  • Preheat oven to 190oC/375F

  • Put all ingredients (except cheese) in a bowl and mix with a spoon.

  • Knead the dough by your hand or using a mixer until smooth and non-sticky.

  • Divide the dough into balls of size 1”.

  • Flatten each dough into a circle in your palm.

  • Put some fate cheese (apprx 1 tsp) and get together the edges and give ball shape with your hands.

  • Place the balls on a tray lined parchment paper.

  • Brush egg yolk on each ball and sprinkle sesame if you like.

  • Bake for 20-25 minutes
