Ultimate Crème Brûlée
It is known as burnt cream and similar to crema catalana which is a dessert consisting of a rich custard easy to make with simply a mixture of vanilla-infused cream, egg yolks, and sugar, with more sugar on top. it is baked in a bain-marie and served in individual ramekins.
Prep time: 15-20 minutes
Bake time: 45-50 minutes

INGREDIENTS:
- 450 gr Heavy Cream 
- 1-2 tsp Vanilla extract 
- 5 Egg yolks 
- 60 gr Granulated sugar 
- 3-4 tbsp demerara sugar or granulated (to caramelize the top) 
INSTRUCTIONS:
- Preheat oven to 15oC (300F). 
- Whisk the egg yolks with half of the sugar. 
- Heat the cream with vanilla and remaining sugar in a saucepan on medium heat until boils. 
- Once the mixture begins to boil, slowly pour it into the eggs mixture in 3 stages and continue to whisk until combined. 
- Pour the mixture through a sieve 2 times. 
- Remove the bubbles with a spoon carefully. 
- Fill a baking tray with almost boiled water up to half of the ramekins then place the ramekins into the water. 
- Put the custard into the ramekins and bake them about 45-50 min. 
- Cool them in room temperature then place into the fridge for few hours. 
- Before serving spread approx. 1 tbsp sugar per ramekin the caramelize the top in a few second with a blow torch.
