Apple Crumble with Vanilla Custard

British puddings and desserts are the backbone of the British cuisine. The traditional Apple Crumble with delicious vanilla custard topping. The crumble is made of butter, flour, cinnamon and brown sugar so that it resembles breadcrumbs. Depending on your preference you can serve it in many ways; either warm crumble topped with ice cream or served with warm vanilla custard.


Prep time: 15 minutes

Bake time: 30-35 minutes

Serve: 4


INGREDIENTS:

  • 5 apples (2 of them grated, 3 cut into chunks)

  • 50 gr caster sugar

  • 1 limon zest

  • ½ lemon juice

  • ½ tsp cinnamon

For Crumble;

  • 100 gr flour

  • 50 gr brown sugar

  • 50 gr cold butter

  • 50 gr rolled oats or granola

  • ½ tsp cinnamon

  • Nuts (optional)

For Vanilla Custard;

  • 300 ml milk

  • 200 ml heavy cream

  • 1 vanilla pod or extract

  • 4 egg yolks

  • 3 tbsp sugar

  • 10 gr cornstarch

INSTRUCTIONS:

  • Heat a small pan, add the caster sugar and heat for 5 minutes until caramelizes. Add the cinnamon, grated apples and cook for 1-2 minutes then stir in the apple chunks.

  • Put the lemon zest and its juice. Cook for a few second and remove from the heat.

  • For the crumble, into a food processor pulse the flour, sugar, butter and cinnamon together just for a few seconds. Then add the rolled oats and nuts and rub with your finger.

  • Place the apples into a small baking dish and sprinkle the crumbles over it.

  • Preheat oven 200C/400F

  • Bake for 30 minutes until the top golden brown.

For the Vanilla Custard;

  • Whisk the egg yolks with sugar and the starch until pale.

  • Heat the milk and cream with vanilla pod or extract. Bring to boil. Remove from the heat.

  • Pour some amount milk mixture into the egg mixture and stir together. Then pour the mixture back into the milk and heat for 3-4 minutes.

  • Remove from the heat.

  • Serve warm with crumble.
