Soft Turkish Bagels with Olive Filling / Turkish Açma Pastry
Açma is well-known soft pastry that you can find easily in any bakery in Turkey. It is similar to bagel in shape and is usually eaten for breakfast or as a snack. This recipe with ground olive, but it is also baked with cheese or as a plain, as you wish.

Bake time: 30 minutes
INGREDIENTS:
200 ml. lukewarm milk
100 ml. lukewarm water
100 gr vegetable/olive oil
500 gr flour
2 tbsp yoghurt
1 whole egg (for dough)
1 egg yolk (for glaze)
1 tbsp instant yeast
50 gr finely ground olive
1 ½ tbsp sugar
1 ¼ tsp salt
2 tbsp butter
INSTRUCTIONS:
Combine the yeast with lukewarm water and sugar in a bowl, stir well and let the yeast dissolve for a few minutes.
Add the milk, oil, yoghurt, egg white, salt and stir them just for combine.
Put the sifted flour and the yeast then begin to knead until the dough holds together very well. The dough is supposed to be soft. If too sticky, you can add some more flour.
Cover the dough with cling film and leave it to rise for almost 2 hours. The dough will be double size.
After rising knead the dough a few minutes.
Divide the dough into balls that size 2’’.
Roll out each ball with ½ tsp butter with your finger into a round shape as much as you can.
Spread the ground olive (apprx. 1 tsp) over each rolled out dough and cut in stripes, then roll and swirl and seal the both ends.
Place each dough on the parchment paper on a tray.
Leave them 15 minutes more on the tray.
Preheat oven to 19oC (375F).
Spread the egg yolk on each dough.
Sprinkle some sesame/ black seeds for garnishing.
Bake for 30 minutes.
